Easy Fried Rice

Who doesn't like Fried Rice? Add some mixed veggies and you have an easy side for anything from pork chops to chicken balls.

Ingredients
2 cups rice, uncooked
1 (1 1/4 ounce) package onion soup mix
1/4 cup cooking oil
1/4 cup soy sauce
3 cups water

Directions
1. Preheat oven to 350°F.
2. Mix all ingredients together in a casserole.
3. Cover and bake 1 hour.

My little guy LOVES fried rice. He'll have a meal of it alone. I do mine a bit differently:

Cook minute rice according to package directions.

Chop celery, green pepper, onion in small pieces.

In frying pan, melt a little butter. Scramble a couple of eggs, pour into pan and cook. Once hardened, add veggies and a splash of soy sauce. Cook until tender.

Add rice and stir in soya sauce to taste.

Easy and quick and I like the protein boost the egg gives it.

Oh, good call on the eggs!

The one I did tonight was this:

Cooked rice
Oil
Veg (broccoli, onion, carrot, celery, frozen corn/peas)
Soy Sauce/teriyaki Sauce

Put the oil in the pan and put the veg in and cook until soft (or your preference)

Add the cooked rice and soy/teriyaki sauce and heat thoroughly (or until crispy bits - again your preference)

I don't add egg because I don't like the taste in mine.

Kaden went back for 2nds which he NEVER does!

I paired that with my homemade spring/egg rolls and it was divine for both of us!

LOL I know..I didn't try it b/c onion soup can be sooo salty (i'm not a salt person normally) so I did my own thing
