Toddler Friendly One Pot Meal

I just made this tonight and had to share..it was fantastic, easy and fast! It would have been faster if I had of just used the cheddar soup but I reserve that for my scalloped potatoes.

One Pot-Cheesy-macaroni-salsa
1 pound ground beef
1 can beef broth (plus 1 can of water)
1 can of cheddar cheese soup *can Sub cheese sauce recipe below
1 cup of salsa
2 cups of uncooked macaroni

* Get a big skillet/pot and cook the ground beef.
* Add the can of beef broth, plus the can of water. Bring to a boil.
* Add the macaroni. Cook 10 minutes or until tender.
* Add the cheddar soup and salsa. Heat thoroughly.

During the cooking of the beef I added onion, garlic and seasonings to our taste (my child loves spices/heat). I also used chicken broth instead of beef because I didn't have any beef on hand. Instead of the cheddar soup mix I made a cheese sauce (which can be used for plain mac and cheese or cheese sauce for veg). After it was all mixed together I added some cooked corn to it to round it out instead of adding a salad (my child hates salad)

He gobbled a full bowl of this so it must've been yummy!

Cheese Sauce:
2 tbsp butter, melted in the micro (medium bowl)
2 tbsp flour, whisk into the melted butter.
1 1/2 cup milk
*whisk milk into flour/butter mixture & heat in microwave for about 5-6 minutes, stop & whisk at each one minute mark. **otherwise it will clump & boil over!
add 1 -1 1/2 cup grated cheese, stir to melt.
(you could do it on the stove in a pot as well)

That sounds fantastic. Inexpensive, fast, easy and kid friendly. My kind of meal. I will be forwarding this to our kitchen manager to get her thoughts in adding it to the rotation.
